Simple Cherry Rhubarb Chicken Glaze

Serves 2, time: 30-40 minutes or when chicken reaches an internal temp of 165°

  • 2 chicken breasts, bone in
  • 1/2 red onion, chopped
  • 1T olive oil
  • 1t Salt
  • 1t ground black pepper
  • 2T Cherry Bliss spreadable fruit: Cherries and Rhubarb
  1. Prep chicken by removing the skin from chicken and pat dry
  2. Put breasts bone side down on a non oiled baking dish
  3. Drizzle olive oil on chicken and spread with the back of spoon to cover top surface
  4. Salt and pepper to taste
  5. At 20-30 minutes or 2/3 of the way through cooking, remove chicken and spread 1T Cherry Bliss on each piece to cover top surface
  6. Return to oven to continue cooking until chicken has reached 165 internal temp or about 30 - 40 minutes
  7. Remove from oven and serve
